ingredients
- Nonstick spray
- 1 cup All-purpose flour
- 1 cup Oat Bran
- 1/2 cup Coconut Sugar
- 1 tablespoon grounded Flax Seeds
- 1 teaspoon Baking powder
- 1 teaspoon Baking Soda
- 1 teaspoon Cinnamon
- 1/2 teaspoon Sea Salt
- 1/2 cup Almond milk, unsweetened
- 1/2 cup Apple sauce, unsweetened
- 1/4 cup Coconut oil, melted and cooled
- 1/4 cup Maple syrup
- 1 cup frozen Cascadian Farms Blueberries
Method
Step 1
Preheat oven to 375 degrees F. Spray a muffin pan with nonstick spray or line with muffin liners.
Step 2
In a large bowl, add flour, oat bran, coconut sugar, flax, baking powder, baking soda, cinnamon and salt. Whisk until combined.
Step 3
Add almond milk, applesauce, coconut oil and maple syrup, stir until just combined.
Step 4
Add frozen blueberries and gently fold into batter.
Step 5
Scoop batter into prepared muffin tin about ¾ full (an ice cream scoop works great for this!)
Step 6
Bake for 20 minutes or until a toothpick inserted comes out clean and the muffins are lightly browned on top.
Step 7
Let cool for 10 minutes before removing from pan. Enjoy! :)
