Sweet Potato Crostini With Mushrooms, Ramps And Cashew Cream

"Finished Product! Mushrooms and Ramps atop a sweet potato crostini with a dollop of cashew cream. This was an impromptu creation after returning from the farmers market with mushrooms, fresh garlic, and ramps. Using the sweet potato as a crostini, what a spectacular bed for these assorted mushrooms, garlic, ramp heads and ramp greens. Taking inspiration from @bazarlazar (who btw is the queen of cashew cream), I added a dollop, and a star was born! This would be a great appetizer, although we enjoyed it as a @whole30 compliant weeknight dinner served with greens and a preserved Meyers lemon vinaigrette. Bread and parmesan cheese would be a nice alternative."
