ingredients
- 2 tablespoons dairy free butter, softened
- 3 tablespoons dairy free yogurt
- 1/4 cup coconut condensed milk
- 1/4 cup coconut sugar
- 1/4 cup unsweetened soy milk
- 2/3 cup all-purpose flour
- 3 tablespoons cocoa powder
- 1 teaspoon instant coffee powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
Method
Step 1
Preheat oven to 340ºF. Grease 1x3 inch round cake tin.
Step 2
In a large bowl, whisk together the flour, cocoa powder, instant coffee, baking powder, baking soda, and salt until combined.
Step 3
In a stand mixer bowl, cream together the butter, yogurt, condensed milk and sugar. Add half of the milk and half of the dry ingredients. Mix on low for 1 minute. Add the remaining milk and dry ingredients. Mix on medium speed for about 1 minute or until smooth.
Step 4
Transfer the batter into prepared pan and tap gently against the counter to release any air bubbles. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Step 5
Remove pan from the oven and let cool in the pan for 10 minutes on a wire rack. Invert cake onto a rack with parchment paper and let cool completely.
