ingredients

  • 2 tablespoons dairy free butter, softened
  • 3 tablespoons dairy free yogurt
  • 1/4 cup coconut condensed milk
  • 1/4 cup coconut sugar
  • 1/4 cup unsweetened soy milk
  • 2/3 cup all-purpose flour
  • 3 tablespoons cocoa powder
  • 1 teaspoon instant coffee powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Method

  • Step 1

    Preheat oven to 340ºF. Grease 1x3 inch round cake tin.

  • Step 2

    In a large bowl, whisk together the flour, cocoa powder, instant coffee, baking powder, baking soda, and salt until combined.

  • Step 3

    In a stand mixer bowl, cream together the butter, yogurt, condensed milk and sugar. Add half of the milk and half of the dry ingredients. Mix on low for 1 minute. Add the remaining milk and dry ingredients. Mix on medium speed for about 1 minute or until smooth. ⁣

  • Step 4

    Transfer the batter into prepared pan and tap gently against the counter to release any air bubbles.⁣ Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

  • Step 5

    Remove pan from the oven and let cool in the pan for 10 minutes on a wire rack. Invert cake onto a rack with parchment paper and let cool completely. ⁣
