Coconut Yogurt with Maple Roasted Strawberries

The maple strawberry syrup is a great way to sweeten the coconut yogurt. I want to start every day like this.

  • 1 pound strawberries , stems removed, sliced
  • 1/4 cup pure maple syrup
  • 2 teaspoons vanilla bean extract
  • 1 cup yogurt of choice
  • 1/3 cup organic muesli


  • Step 1

    Preheat oven to 350℉ and grease a baking dish with oil or cooking spray.

  • Step 2

    Place the strawberries into the prepared baking dish. Mix the strawberries with maple syrup and vanilla. Place the strawberry-filled baking dish in the oven and roast for about 10-15 minutes, stirring once during the baking time. The strawberries are done when they have softened and the juices are thick and bubbly. 

  • Step 3

    Cool completely and store in an airtight container in the fridge. To serve, spoon yogurt into a serving plate, top with and roasted strawberries. Enjoy!
