If you have food allergies it just might have been awhile since you last had a dumpling. This 'free from' recipe will fix that!

Vegan Gluten Free Pot Stickers

Ingredients

Filling:

1 red onion sliced
1 tablespoon minced ginger
1 cup sliced shiitake mushrooms
1 cup white cabbage, shredded
1 cup carrots, shredded
1 cup chopped garlic chives or chives
1 teaspoon white pepper
1 teaspoon sesame oil
1/4 cup chopped cilantro
Salt to taste
1 teaspoon sesame oil
Mix all the the ingredients and set it aside.

Dough:
1 1/4 cups Bob's Red Mill Gluten-Free All-Purpose Flour @bobsredmill

3/4 cup gluten-free sweet rice flour
3/4 teaspoon salt
3/4 cup plus 2 tablespoons boiling water
2 tablespoons of melted coconut oil.

Mix everything in the food processor until it forms a dough. Divide the dough in two parts roll until thin and cut it with a round glass to form circle pieces. Fill it with the veggies, shape them like potstickers, cook for 10 min with one table spoon of vegetable oil and 1/3 water until crispy. Serve it with season liquid amino acids. Yummy snack or even make it as a light dinner with the side of salad!
