For the pain Dough

ingredients

  • 135 grams bread flour
  • 15 grams whole wheat flour
  • 113 grams water
  • 30 grams sourdough starter
  • 3 grams salt

For the Butterfly Pea Flower Dough

ingredients

  • 135 grams bread flour
  • 15 grams whole wheat flour
  • 113 grams water
  • 5 grams blue pea flower, mixed with 120 grams of boiling hot water
  • 30 grams sourdough starter
  • 3 grams salt

Method

  • Step 1

    First, feed your starter. (5grams starter, 35grams flour, 35 grams water)with your water temperature at 78F. At the same time, prepare your pea flour and hot water mixture and leave to sit until it will cool. Let the starter sit for 7 hours.

  • Step 2

    For the plain sourdough, start by mixing the flour with water in it's own container and let sit for 1 hour. Do the same with the colored pea flour water with the flour in it's own container and let sit for 1 hour. Add the starter to the respected dough, still keeping them in separate containers.

  • Step 3

    After 30 minutes, add the salt to each dough and mix, you can use a stand mixer at this point and mix on low for 1 minute. Let each dough sit for another 30 minutes.

  • Step 4

    Start laminating the dough by placing one on top of each other, folding on top of each other like an envelope for 4 turns. Let sit for 30 minutes.

  • Step 5

    Stretch and fold the dough onto itself for 4 turns every 15 minutes. After, let the dough rest for 40 minutes and let the dough rise to about 20-30%.

  • Step 6

    Shape the dough to preference and leave shaped dough in the proofing basket for 15 minutes. Place the dough in a dutch oven in the fridge overnight.

  • Step 7

    The next heat oven to 500 degree F , bake straight from the fridge, with closed lid 15 minutes, then open the lid and bake at 450 F for 20 min. Enjoy
