For the Croissant Dough
ingredients
- Use your favorite croissant dough recipe (store-bought or homemade)
For the Cheesecake Filling

- 8 ounces (1 cup) cream cheese, softened to room temperature
- 1/4 cup granulated sugar
- 1/4 cup sour cream
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 1 large egg, at room temperature
For the Cherry Filling

- 1 cup pitted sour cherries (fresh or frozen)
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon fresh lemon juice
Method
Step 1
Use your preferred croissant dough recipe. After completing three single folds, roll the dough to a thickness of about 1/3 inch (8mm).
Step 2
Using a round cutter, cut the dough into circles approximately 4 inches (10cm) in diameter. Keep cold until ready to assemble.
Step 3
To make the cream cheese filling; In a large bowl, cream together the cream cheese, sugar, sour cream, flour, vanilla extract, and egg until smooth.
Step 4
Fill the prepared dough circles with the cheesecake mixture. Freeze for 2 hours to set the filling.
Step 5
To make the cherry filling; In a medium saucepan, combine the cherries, sugar, cornstarch, and lemon juice. Cook over medium-high heat, stirring frequently, until the mixture thickens and the cherries are softened, about 10 minutes. Remove from heat and allow the filling to cool.
Step 6
Preheat the oven to 375°F.
Step 7
Place the cheesecake-filled dough circles on a baking sheet lined with parchment paper. Spoon the cherry filling over the cheesecake mixture.
Step 8
Bake for 18-20 minutes, or until the dough is golden brown and the cheesecake filling is set.

Allow the danishes to cool slightly before serving.
