Blackberry Basil Gin Fizz
6 basil leaves
3 tbsp honey
700mls dry gin
400mls soda water
2 tbsp granulated sugar
Fill two glasses with ice and place them in the fridge to chill.
In a tall glass or cocktail shaker; place the berries, basil, lime juice and honey. Use a muddler to combine all the ingredients together into a rough pulp.
Add the gin to the fruit pulp and combine well.
leave the pulp whole or strain it for s smoother texture.
Empty the ice from the chilled glass.
Place the sugar and zest of a lime onto a plate and combine. Run a wedge of lime around the edge of each glass and dip into sugar to create a frosted finish.
Pour the fruit and gin puree into the two glasses and top with soda water and some fresh basil for garnish.
