Dough:

ingredients

  • 3 cups flour
  • 1/2 cup caster sugar
  • 1 tablespoon instant yeast
  • 2 eggs
  • 1/3 cup butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup milk, warmed

Filling:

ingredients

  • 1/4 cup (plus 3 tablespoons) softened butter
  • 1 cup brown sugar
  • 3 teaspoons cinnamon

Cream Cheese Glaze:

ingredients

  • 1/2 cup confectioners sugar
  • 1/2 cup cream cheese
  • 2 tablespoons softened butter
  • 4 tablespoons milk
  • 1 teaspoon vanilla extract

Method

  • Step 1

    Take flour, yeast, caster sugar and eggs in a bowl and whisk to combine. Add cinnamon and vanilla to the lukewarm milk and gradually add that to the dry ingredients to form a dough. Turn out the dough onto the kitchen counter and start kneading. Knead until the dough feels smooth and elastic.

  • Step 2

    Add butter, one cube at a time, and knead until all the butter is absorbed. Transfer the dough into a lightly greased bowl and proof until it doubles in size. Knock back the dough and roll out into a rough rectangle.

  • Step 3

    Using an offset spatula or the back of a knife, spread a thin layer of softened butter onto the surface of the dough.

  • Step 4

    Combine brown sugar and cinnamon together and sprinkle that over the softened butter to cover the entire dough surface.

  • Step 5

    Fold dough by bringing one side into the middle, then overlapping the other side over. Slice dough into even strips and separate. Make two slits into the individual dough pieces, without piercing the top of the strip. Braid the strips, then tuck the end piece and create a knot. Place into prepared cupcake baking pan.

  • Step 6

    Proof the rolls completely, until doubled in size, for 1-2 hours (this depends upon the temperature). Brush with milk at bake at 400°F for 15-20 minutes or until golden.

  • Step 7

    To make the cream cheese glaze, combine all ingredients together and whisk until smooth. you can adjust the consistency by adding more or less milk.

  • Step 8

    Drizzle it on warm cinnamon rolls and serve.
