Forever my favorite sandwich combo: sweet potato, avocado and kale 🌿 I got a very kind package from @misfitsmarket with their fresh, organic produce that’s sometimes not picture perfect, but just as good to use. I used their kale + sweet potato for this on-the-go sammy, served with a side of sliced peaches and apples. -@megjosephson

Add ingredients directly to your favorite online grocery cart (where available).


  • 2 large sweet potatoes
  • 8 slices bread
  • Oil, as needed
  • 1 bunch kale
  • 2 avocados, mashed
  • Salt, To Taste
  • Black pepper, To Taste


  • Step 1

    Preheat oven to 425ºF. Poke holes in the sweet potatoes and bake until soft, about 45 minutes. Remove from oven and let cool until able to handle, then mash 1/4 onto each slice of bread.

  • Step 2

    Heat a little oil in a skillet and sauté kale until dark green, 1-2 minutes. Add to sandwiches, along with mashed avocado. Season with salt and pepper.
