Spaghetti with Tomatoes, Basil, and Butter

  • 1 pound dry spaghetti
  • 8 fresh Roma tomatoes, quartered
  • 1 pint cherry tomatoes
  • 2 tablespoon olive oil
  • salt, to taste
  • 1/4 cup fresh basil
  • 1 1/2 tablespoon unsalted butter
  • Pinch red chili flakes, optional


  • Step 1

    In a skillet, over medium-high heat, combine roma tomatoes, cherry tomatoes and 1 tablespoon olive oil. Cook until softened and some juice is released.

  • Step 2

    Season with salt and reduce heat.

  • Step 3

    Cook spaghetti according to package directions (or until Al dente) and toss into the cooked tomato pan. Season to taste with more salt.

  • Step 4

    Finish with a bit of butter and drizzle with olive oil. Garnish with fresh basil leaves.
