Potato Spud Nachos
"I have partnered up with @cascadianfarm and @thefeedfeed to create a dynamo recipe that will be perfect for an autumn afternoon or game day celebration. #ad Who doesn’t love nachos? Who doesn’t love when nachos are paired up with potatoes? The answer? NO ONE! Using Cascadian Farm Spud Puppies as my nacho “chip,” I’ve created an incredibly flavorful tater tot nachos recipe with a spicy white cheddar queso, spicy beef, and a flavorful chipotle greek yogurt sauce. This dish is definitely something that will be a party pleaser...or perhaps just a “light” afternoon snack. I was able to pick up all of my ingredients at @FreshThyme Market in Lincoln Park. I love Fresh Thyme Market because of the fresh ingredients available...not to mention the quality. I loved being able to go up to the butcher knowing I was picking up quality beef to include in this recipe. ingredients

For the Beef

  • 1 teaspoon Olive Oil
  • 1 Red Onion, finely diced
  • 1/2 Jalapeno, finely diced
  • 1/2 pound ground Beef
  • 1/4 cup Tomato Sauce
  • 1 tablespoon Chili Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 3/4 teaspoon Cayenne Pepper
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper

Method

  • Step 1

    Starting with the beef preparation, heat olive oil in a frying pan over medium heat. Add onion and jalapeno and cook until soft. Add ground beef, breaking it up with a spatula to small crumbles. Add tomato sauce, spices, salt and pepper. Cook through and set aside.

For the Spicy White Cheddar Queso:

  • 1 tablespoon Butter
  • 1/2 Jalapeno, finely diced
  • 1 teaspoon Red Onion, grated
  • 2 1/4 teaspoon Flour
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon Garlic Powder
  • 1/4 teaspoon Cayenne Pepper
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1 1/2 cups 2% milk
  • 1 2/3 cups White Cheddar Cheese, shredded

For the Assembly

  • 1 cup nonfat plain Greek Yogurt
  • 3 tablespoon canned and finely diced chipotle chiles in adobo
  • 2 (16 ounce) bag Cascadian Farms Organic Spud Puppies
  • 1/2 cup canned Black Beans
  • 1 diced Roma Tomato
  • 1 sliced Jalapeno
  • 3 tablespoon Red Onion, diced
  • 3 Scallions, diced
  • 1 diced Avocado
  • 1/4 cup for garnish Cilantro
  • 1 Lime, sliced for garnish

  • Step 1

    Prepare Cascadian Farms Spud Puppie following the directions on the package.

  • Step 2

    While Spud Puppies are baking, prepare spicy white cheddar queso. Add butter, jalapeno and onion to a pot over medium heat. Once butter is melted, add flour, spices, salt and pepper. Stir until it turns into a rich paste.

  • Step 3

    Slowly add milk to the pot and continue to stir until it thickens to create the cheese sauce. Remove pot from heat, and stir in cheese. Keep warm on low heat until ready to serve.

  • Step 4

    Come Greek yogurt and chilies in adobo. This will serve as the base for the nachos.

  • Step 5

    Assemble the nachos beginning with a layer of chipotle Greek yogurt sauce on the bottom of a serving dish or platter. Add a layer of Spud Puppies, then queso, then beef. Sprinkle with half the black beans, tomato, jalapeno, red onion, and scallion. Repeat another layer of Spud Puppies, queso, and remaining toppings. Top with cilantro and avocado. Serve with lime wedges.
