- 8 white corn tortillas
- 1 avocado
- 2 cups cherry tomatoes
- 2 tablespoons chopped onion
- 2 tablespoons chopped cilantro
- 1 lime
- 1 can chickpeas
- Salt to taste
To make the guacamole, mix avocado, 1 tablespoon of cilantro, 1 tablespoon of onion, juice of half a lime and a pinch of salt in a morter. Mash until creamy but still chunky.
To make the mango pico de gallo. Chop tomatoes and mango. Add the juice of half a lime, 1 tablespoon of cilantro, 1 tablespoon of chopped onion and a bit of salt. Mix until combined.
To assemble the tacos. Heat up the tortillas in a hot and try pan for a minute. Top with guacamole, mango pico de gallo and chickpeas. Enjoy!
