Grilled Corn and Peach Tartine
"Oh sweet, sweet grilled corn, how you make everything taste SO much better 😍 But I guess I could say the same about grilled peaches too 😉 This is definitely one of my favorite summer toast recipes - grilled corn and fruit, with ricotta and basil leaves over sourdough 🥰 Have you guys every tried a toast like this? It’s surprisingly so delicious...and easy 😉"

  • 1 tablespoon ghee
  • 1 ear of corn
  • 1 peach, pitted and thickly sliced
  • a handful of basil
  • sprinkle of goat cheese
  • Kosher salt, to taste
  • Sourdough bread, sliced and toasted


  • Step 1

    In a grill pan over medium-high heat warm the ghee. Grill the corn and peach slices until the peaches start to caramelize and the corn has a nice char on each side, 3 to 4 minutes.

  • Step 2

    Remove from heat and cut the corn off the cob. Add the grilled peaches and corn into a large bowl. Season with salt and pepper and gently mix to combine.

  • Step 3

    Pile the corn and peach mixture onto the toasted sourdough bread. Top with goat cheese and basil. Enjoy!
