- 1 tablespoon ghee
- 1 ear of corn
- 1 peach, pitted and thickly sliced
- a handful of basil
- sprinkle of goat cheese
- Kosher salt, to taste
- Sourdough bread, sliced and toasted
In a grill pan over medium-high heat warm the ghee. Grill the corn and peach slices until the peaches start to caramelize and the corn has a nice char on each side, 3 to 4 minutes.
Remove from heat and cut the corn off the cob. Add the grilled peaches and corn into a large bowl. Season with salt and pepper and gently mix to combine.
Pile the corn and peach mixture onto the toasted sourdough bread. Top with goat cheese and basil. Enjoy!
