"Baked French Toast is my new found indulgence for the weekend brunch at home: thick slices of buttery brioche get soaked in a batter of almond milk, eggs, vanilla, cinnamon and lemon zests overnight; spread with fresh raspberries and blueberries, almonds slices before baking it in the oven the next morning. Each bite of this toast has a perfect balance of sweetness and tartness with a touch of crunchiness. Oh, and don't forget the icing sugar and maple syrup for some extra yummm! Serves 4-6
Ingredients
1 loaf of brioche bread (approx. 14 oz)
2 cups of almond milk
1 ½ tsp. vanilla extract
¼ tsp. ground cinnamon
4 large eggs
2 Tbs. lemon zests
¼ cup +2 Tbs. granulated sugar
4-6 oz. each of fresh raspberries and blue berries
¼ cup sliced almonds
Icing sugar for dusting
1/3 cup maple syrup
Methods
Slice the brioche loaf into thick pieces, about 10 slices, then place the slices in two rows over lapping a bit in a rectangular baking dish. In a large bowl, whisk together the almond milk, eggs, vanilla extract, ground cinnamon, ¼ cup sugar, lemon zests to combine. Pour the mixture gradually and evenly over the bread. Scatter the fresh raspberries and blueberries all over and cover with plastic wrap and let it soak in the fridge overnight.


Next day, preheat the oven to 350 degree F. Take the baking dish out of the fridge and scatter almond slices and remaining 2 Tbs. sugar all over the bread and place in the oven. Bake in the oven for about 35-40 minutes until the toasts are golden brown and the liquid is all absorbed. Dust with icing sugar liberally and cut into slices and serve with drizzles of maple syrup.
