ingredients

  • 1 head of cauliflower
  • 2 cups (1 1/2 sticks) water
  • 2 cups veggie broth
  • 4 cloves of minced garlic
  • 4 tbsp melted butter
  • dash of salt and pepper

Method

  • Step 1

    Cut up a head of cauliflower into florets, place in a large pot.

  • Step 2

    Pour in veggie/chicken broth, water, 2 cloves of garlic, and a good pinch of salt and pepper. Place the pot on the stovetop and bring to a boil.

  • Step 3

    Once it has boiled, reduce the heat and place the lid on top. Let simmer for 15-20 minutes, or until cauliflower is tender. Poke cauliflower with a fork, if it is soft, it is ready!

  • Step 4

    Turn the heat off, scoop out 1/2 to 1 cup of the liquid. Drain the cauliflower, and place it in a food processor or blender.

  • Step 5

    Add in the remaining garlic and melted butter. Process/blend everything together, while slowly adding in the liquid until smooth.

  • Step 6

    Place the cauliflower mash in a large bowl.

  • 1 pound raw, tail off shrimp
  • 1 cups fresh or frozen corn
  • 1 large chopped tomato
  • 3 tbsp old bay
  • 2 tbsp olive oil

  • Step 1

    In a skillet, drizzle the olive oil. Place the heat on medium, and heat the oil for 1-2 minutes.

  • Step 2

    Place the shrimp in the skillet and let cook for 2 minutes on each side. The shrimp will become pink.

  • Step 3

    Add in the corn and tomatoes. Then sprinkled in the old bay (or pour in depends on how much you’d like). Saute everything together till old bay is covering the shrimp, tomatoes, and corn.

  • Step 4

    Place the shrimp, corn, and tomatoes on top of the cauliflower mash. And ENJOY!
