Cauliflower Parmesan

ingredients

  • 1 whole cauliflower
  • 4 tbsp olive oil
  • 2 teaspoon salt and pepper
  • 1 cup marinara sauce
  • 4 ounces fresh mozzarella

Cauliflower Parmesan

Method

  • Step 1

    Place the cauliflower on a cutting board. Remove the bottom of the stem and the outer leaves.

  • Step 2

    With a sharp knife, cut right down the center of the cauliflower. Taking one half of the cauliflower, cut 1 inch steaks and repeat on the other half. You will have leftover pieces of cauliflower, that’s ok!

  • Step 3

    Rub olive oil, pepper, and salt on both sides of the cauliflower.

  • Step 4

    Cook in the air fryer at 390 degrees for 20 minutes or in the oven at 425 degrees for 35 minutes, flipping halfway. When the cauliflower is done, it will be tender and a bit golden and crispy on the outside.

  • Step 5

    Take the baking tray out and top with warmed marinara sauce and mozzarella cheese. I like to add some seasoning too (thyme, rosemary, basil).

  • Step 6

    Switch the oven to high broil, place the tray back in the oven and broil for 10-15 minutes until the cheese is melted.

  • Step 7

    Serve the cauliflower parmesan on a bed of pasta, side salad, and/or veggies!

  • 2 slices of bread
  • 1 tbsp butter
  • 2 cloves of minced garlic
  • Step 1

    Place 2-3 slices of bread (sourdough, whole wheat, white) in a food processor, and pulse till tiny bits.

  • Step 2

    Turn the stovetop to medium heat, place a pan with the butter and garlic on the stovetop. Let the butter melt and the garlic become fragrant.

  • Step 3

    Add in the breadcrumbs and cook for about 5-8 minutes until golden.

  • Step 4

    Once the breadcrumbs are crispy and golden, add them to the top of the cauliflower parmesan for extra flavor and crunch!
