"Aaaaalmost too much sandwich for one hand! I spent so much time eating the way other people thought I should eat. For a long time I lost the joy I have when I cook because I wasn’t eating the foods that make me happy and also make me feel gooood. I was spending so much time assembling perfect smoothie bowls that had so much cauliflower in them that they were basically inedible. Not trying to get preachy on you guys just a nice reminder that even with food you’re not going to figure it out overnight and you’re not supposed to. I’m still learning to enjoy the journey, but now I’m doing it with foods I actually enjoy to make and eat."

ingredients

  • 2 slices Ezekiel bread, toasted
  • 1/2 avocado, mashed
  • 2 tablespoon olive oil
  • 1 large egg
  • 3 slices turkey
  • 1/2 cup spinach

Method

  • Step 1

    To make the fried egg, heat a skillet with oil, on the stove, over medium-high heat. Then, crack the egg into the pan and fry for 3-5 minutes. Spoon the excess oil over the egg white to cook it faster.

  • Step 2

    Next, spread the avocado onto a slice of toasted bread.

  • Step 3

    Top the avocado with the fried runny egg, turkey, spinach and final piece of toasted bread.

  • Step 4

    Cut the sandwich in half and enjoy!
