ingredients

  • 4 tablespoons unsalted butter
  • 3 cups water
  • 1 teaspoon fine sea salt
  • Rind of 1 lemon, peeled, avoiding the pith
  • 2 cups white rice
  • 3 cups hot milk
  • 2 cups sugar
  • 4 large egg yolks
  • Cinnamon, to taste

Method

  • Step 1

    Bring water, lemon rind and salt to a boil.

  • Step 2

    Add rice and bring it back to a boil.

  • Step 3

    Reduce to a simmer for about 10 minutes, until the water is absorbed.

  • Step 4

    While stirring, slowly add hot milk.

  • Step 5

    Let the rice cook for 25-30 minutes. Stir frequently and keep the heat low to prevent the rice from burning at the bottom of the pan.

  • Step 6

    Add sugar and stir.

  • Step 7

    Pour egg yolks into the pot through a strainer and stir well.

  • Step 8

    Stir in the butter.

  • Step 9

    Remove pot from heat and let it rest for 10 minutes.

  • Step 10

    Ladle the rice into dish(es).

  • Step 11

    Sprinkle cinnamon in a design of your choice and enjoy.
