This past week was such a busy one over here and with Christmas just 30 days away, we know it won't be slowing down anytime soon. πŸ˜³πŸŽ„πŸ™ˆ So, while quick and easy meals are helpful any time of year - around the Holidays they're kind of essential. This dish comes together with just 10 ingredients all in one pot and in approximately 30 minutes. It's tasty, healthy and flavorful and one that would be perfect for this, often hectic time of year (and beyond). -@lunchesandlittles

ingredients

  • 4 links caprese-style sausage
  • 12 ounce bag red lentil pasta
  • 32 ounces vegetable broth
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 small yellow onion, chopped
  • 5 garlic cloves, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons dried oregano
  • 8 - 12 basil leaves, roughly chopped
  • Kosher salt and freshly ground pepper, plus more to taste

Method

  • Step 1

    In a large skillet or pot combine all ingredients except for the basil leaves, salt, and pepper. Stir together.

  • Step 2

    Cover and bring to boil. Then immediately reduce heat and simmer for approximately 20 minutes (covered), stirring every few minutes.

  • Step 3

    Add salt, pepper, and your chopped basil leaves. Stir to combine for one minute.

  • Step 4

    Remove from heat, adding additional leaves for garnish, as desired.
