Veggie & Rice Bowl

"A throwback to this delicious Buddha bowl full of flavour! Grilled tomatoes, courgette (zucchini) and peppers in smoked paprika with spicy chilli rice and avocado. All brought together with dairy free yogurt and chopped chives! A vegan dish everyone can enjoy!!!"

Ingredients:

1 cup of cooked short grain rice

1/2 avocado

3 cherry tomatoes

1/2 courgette (zucchini)

1/2 yellow pepper

1/2 red chilli, finely chopped

1 clove of garlic

1 shallot

Optional:

Dairy free yogurt (or Greek yogurt)

Chopped chives

Leafy greens

Sweet chilli sauce

Method:

In a medium pan, add minced garlic and shallot until gently fried, about 2-3 minutes. Add the chopped tomatoes, peppers and courgette (zucchini) and cook until softened.

In a separate pan, gently fry off the chopped chilli. Add the cooked short grain rice (For an extra kick of flavour, add a dollop of sweet chilli sauce).

When the vegetables are fully cooked, assemble your bowl. Finish with 1/2 a sliced avocado, a dollop of yogurt, and chopped chives. Sprinkle salt and pepper to taste and enjoy!
