ingredients

  • 4 ounces halloumi cheese, thinly sliced
  • 1 cup cooked quinoa
  • 5 ounces mixed greens
  • handful of fresh basil
  • 1 cup cherry tomatoes
  • 1/4 small red onion, thinly sliced
  • 1/2 cup sliced radishes
  • 1/2 cup green olives
  • juice of one lemon
  • 1/4 cup olive oil
  • salt and freshly ground black pepper

Method

  • Step 1

    Heat a grill pan over medium heat and brush with olive oil. Brush each slice of halloumi cheese with olive oil, then place on the grill. Cook for about 2 minutes per side. Remove from heat and set aside. 

  • Step 2

    Add the greens to a large platter and drizzle with the lemon juice and olive oil, tossing to coat. Season with salt and pepper.  Scatter the remaining ingredients on top of the greens and serve immediately.
