Put a delicious pistachio spin on a nostalgic holiday treat. Traditional puppy chow recipes are made with peanut butter and chocolate, but this version is not to be missed! Maple syrup, sea salt, and lots of chopped Nichols Farms Maple Butter Pistachios make for a sweet, salty, crunchy mix that’s perfect for packaging up for holiday gifts. The trick to including other ingredients into white chocolate, which is notoriously finicky, is adding a few tablespoons of very hot water. You might be thinking: “don’t add water to chocolate!”, but water is the key to creating an emulsion that is smooth and pourable for coating the cereal. Most pistachio-flavored puppy chow recipes include packaged pudding mix, but this version uses real pistachios!

  • 1 (11-ounce) bag white chocolate chips
  • 4 tablespoons unsalted butter
  • 2 tablespoons pure maple syrup
  • 4 cups rice cereal squares, (such as Chex)
  • 1 (5-ounce) bag Nichols Farms Organic Maple Butter Pistachios, roughly chopped
  • 2 teaspoons flaky sea salt
  • 1 1/4 cups powdered sugar

Method

  • Step 1

    Add white chocolate chips, butter, and maple syrup to a heatproof bowl and set over a small pot of simmering water. Allow the mixture to melt completely, stirring occasionally. The mixture will appear to seize but will remain soft and pliable like fudge or frosting.

  • Step 2

    Meanwhile, add the rice cereal squares and chopped Maple Butter Pistachios to a large bowl.

  • Step 3

    Add 2-3 tablespoons of the simmering water to the white chocolate mixture and stir until smooth and pourable. Start with adding two tablespoons and only add the third if necessary. Pour the mixture immediately over the cereal and chopped pistachios, then season with sea salt. Stir gently until well-coated.

  • Step 4

    Allow mixture to cool completely, then add powdered sugar and stir to coat.

  • Step 5

    You can store the salted maple pistachio puppy chow in an airtight container for up to 5 days, but it is best if eaten soon after making it.
