- 3 cups sliced potato wedges
- 1 tablespoon heaped corn starch
- 1 tablespoon good quality olive oil
- 1/2 tablespoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Cracked black pepper
- 1/2 cup full fat Coconut milk
- 2 tablespoons good quality olive oil
- 1 tablespoon lemon juice
- 1 tablespoon dijon mustard
- 2 diced capers
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1 tablespoon maple syrup
- 1 tablespoon chopped dill
Method
Step 1
Preheat the oven to 175 C or 350 F
Step 2
Place the potato wedges in a bowl and sprinkle with the corn starch, salt, garlic powder, smoked paprika, and pepper.
Step 3
Place on a parchment paper-lined baking tray evenly spread out and drizzle with olive oil.
Step 4
Let the wedges bake for 16-18 minutes.
Step 5
While the wedges are baking mix the dressing, leaving out the dill for garnish.
Step 6
Smear the dressing on a plate and once the wedges are done and you’re ready to serve, layer the wedges on top of the dressing.
Step 7
Sprinkle with chopped dill and voila!
