We love a good fried chicken sandwich! This sandwich cuts down on the cleanup by baking it in the oven, instead of deep frying. Slathered in a spicy sauce, these sandwiches are the perfect thing for dinner, or as leftovers for the next day!

ingredients
For the Chicken
- 4 chicken breasts, sliced lengthwise, then widthwise
- 1 cup buttermilk
- 1/4 cup hot sauce
- 4 cups cornflakes
- 3 tablespoons all-purpose flour
- 2 teaspoons cayenne
- 2 teaspoons Kosher salt

For the Sauce
- 1/4 cup unsalted butter
- 3 tablespoons vegetable oil
- 2 tablespoons cayenne
- 2 tablespoons honey
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
Method
Step 1
Preheat oven to 450°F. Line a baking pan with parchment paper.
Step 2
Combine chicken, milk and hot sauce in a bowl, mix well. Cover and refrigerate for at least 2 hours or overnight.
Step 3
Pulse cornflakes in food processor, until crumbs forms. Add cornflakes to a bowl with flour, cayenne, and salt.
Step 4
Coat chicken in cornflakes mixture, pressing firmly to ensure crumbs stick to all sides of chicken. Transfer chicken to prepared baking pan and bake at for 20-25 minutes, flipping halfway.
Step 5
While chicken is baking, prepare sauce. Add all ingredients to pan on med-heat. Cook, stirring, until butter has melted. Brush chicken with sauce and serve.
