Lemon Poppy Seed Pancakes with Honey Glazed Strawberries
Recipe Intro From feedfeed

Start your cozy morning with a batch of fluffy lemon scented pancakes topped with honey glazed strawberries

Lemon poppy seed pancakes with honey glazed strawberries . I woke up this morning with that weekend I lingered in my jammies a little longer, blared some 90’s beats (because there’s no weekend-feeling without Britney) and whipped up a stack of gorgeous pancakes! And let me tell you - one bite and I was the walking, talking “😎” emoji. Extra-fluffy and light as a cloud, these pancakes have a bright and fresh lemon flavour with bites of poppy seeds throughout. The honey-coated strawberry-topping is the perfect sweetness to balance the lemon-tart flavour. These pancakes, Britney, and a cuppa’s the recipe for a perfect cozy morning. -@letsgetspooning

For the Lemon Poppy Seed Pancakes

  • 2 cups all purpose flour
  • 21/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 tablespoons poppy seeds
  • 2 tablespoons lemon zest
  • 1/2 teaspoon salt
  • 11/3 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons honey
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

For the Strawberries

  • 11/2 cups strawberries
  • 3 tablespoons honey

  • Step 1

Whisk together flour, baking powder and soda, poppy seeds, zest, and salt. In a separate bowl, whisk together milk, eggs, butter, honey, lemon juice, and vanilla. Add wet ingredients to dry and combine, do not over mix.

  • Step 2

Pour 1/3c batter onto greased pan on med-low heat. When bubbles appear around the edges, flip and cook the other side until golden.

  • Step 3

For the strawberries, toss to combine berries and honey. Serve pancakes topped with strawberries and maple syrup.
