For the Lemon Poppy Seed Pancakes

ingredients

  • 2 cups all purpose flour
  • 2 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 tablespoons poppy seeds
  • 2 tablespoons lemon zest
  • 1/2 teaspoon salt
  • 1 1/3 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons honey
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

For the Strawberries

  • 1 1/2 cups strawberries
  • 3 tablespoons honey

Method

  • Step 1

    Whisk together flour, baking powder and soda, poppy seeds, zest, and salt. In a separate bowl, whisk together milk, eggs, butter, honey, lemon juice, and vanilla. Add wet ingredients to dry and combine, do not over mix.

  • Step 2

    Pour 1/3c batter onto greased pan on med-low heat. When bubbles appear around the edges, flip and cook the other side until golden.

  • Step 3

    For the strawberries, toss to combine berries and honey. Serve pancakes topped with strawberries and maple syrup.
