"MIDDLE EASTERN BOWL | with za'atar roasted cauliflower, cherry tomatoes, finely sliced red onion, lentil salad, and avocado on a bed of green leaf lettuce. Instead of using a tahini-based dressing, I decided to dress this salad lightly with only fresh lime juice, a pinch of sea salt, and fresh dill. Once you mix all ingredients together, you have an amazing fusion of flavors. A bit of hummus would have finished this salad off nicely but my chic peas are still in the soaking stage and I ate the last of the hummus a few days ago. I love using hummus to dress my salads, especially when I need to make a quick homemade dressing. It's perfect. Try it sometime, you will love it. The lentil salad recipe listed in comments."

Lentil salad:
1 cup lentils, 1/4 cup finely chopped red onion, 1 tbs chopped fresh dill, 1/4 tsp garam masala, pinch of sea salt and pepper. Combine ingredients in a small bowl. Serve.
