- 1/2 pound burrata
- 1/2 cup heavy cream
- 1/2 pound short-cut pasta (like penne or rigatoni)
- 2 tablespoons olive oil
- 1/2 pound Italian sausage (casings removed)
- 1 medium yellow onion, diced
- 1 red bell pepper, seeded and diced
- 1 (10 ounce) can Red Gold Diced Tomatoes + Green Chilies
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- Red pepper flakes, to taste
Method
Step 1
Tear the burrata into pieces and add to a food processor. Pour in the heavy cream and pulse on low for 10-second intervals until the mixture is smooth and creamy. Set aside.
Step 2
Boil the pasta according to the package directions. Reserve ½ cup of the pasta water before draining.
Step 3
Heat the olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it up with the back of a spoon as it cooks. Cook until fully browned, about 6-7 minutes.
Step 4
Add the diced onion and red bell pepper to the skillet with the sausage. Cook for 5-6 minutes, stirring occasionally, until softened.
Step 5
Pour in the Red Gold Diced Tomatoes + Green Chilies. Stir and cook until most of the liquid has evaporated, about 5 minutes.
Step 6
Lower the heat to low. Add the cooked pasta and the whipped burrata to the skillet. Toss gently until the pasta is fully coated in the creamy sauce. If needed, add reserved pasta water, 1 tablespoon at a time, to reach your desired consistency.
Step 7
Divide the pasta into bowls and sprinkle with red pepper flakes for extra heat. Serve immediately and enjoy!
