Spring Jam:

ingredients

  • 1 pound Cascadian Farm Harvest Berry or Cherry Berry Blend
  • 1/4 cup lemon juice
  • 5 tablespoons stevia or ½ teaspoon monk fruit

Base:

ingredients

  • 1 cup almond flour
  • 1 cup coconut flour
  • 2 teaspoons stevia or 3 grams of liquid stevia
  • 2 tablespoons plant based milk
  • 1 1/2 teaspoons coconut oil

Dairy-free Cheesecake:

ingredients

  • 1 cup cashews
  • 1 1/2 cups coconut cream
  • 1 tablespoon stevia
  • 2 1/4 tablespoons tablespoons unflavored gelatin or agar

To make the jam:

Method

  • Step 1

    In a pot, place all the fruits and the lemon juice, stir, and cook over medium heat for 30 minutes.

  • Step 2

    Blend fruit in a food processor until smooth. Pass jam through a fine mesh sieve into a bowl and set aside to cool completely.

To make the base:

  • Step 1

    Preheat oven to 375°F.

  • Step 2

    Mix the stevia, almond flour, coconut flour, non-dairy milk, and coconut oil in a bowl.

  • Step 3

    Press into a light greased 9 inch springform pan evenly. Bake for 25 minutes. Remove from oven to cool completely.

To make the filling:

  • Step 1

    In a food processor blend the cashews, coconut cream, stevia, and gelatin in the blender for 2 minutes.

  • Step 2

    Add the jam and blend again. Add mixture to a pot and cook for 2 minutes.

  • Step 3

    Remove from heat and pour over the top of the cooled base.

  • Step 4

    Place in the refrigerator for 1 hour or over night before slicing and serving. Top with more jam before slicing.
