Onions are caramelized until golden brown and layered with balsamic glazed mushrooms on a puff pastry base before being finished with thyme and parmesan - an ideal weekend brunch.

ingredients

  • 400 grams mixed mushrooms
  • 2 onions, sliced
  • 6 sprigs thyme
  • 4 sprigs rosemary
  • 2 tablespoons balsamic vinegar
  • 1 sheet puff pastry
  • 1 egg whisked with 1tbsp water
  • 3 tablespoons parmesan cheese
  • 2 teaspoons parsley, finely chopped, to finish

Method

  • Step 1

    Sauté your sliced onions in a pan with olive oil until caramelized. Season with salt and pepper to taste. Set aside.

  • Step 2

    In the same pan, heat olive oil on medium high heat. Sauté your mixed mushrooms, adding in 3-4 sprigs of thyme and rosemary. Season with salt and pepper. When the mushrooms are starting to brown, add in your balsamic vinegar and let reduce to a glaze. Taste, adding in more salt, pepper and balsamic vinegar if necessary. Remove the herbs and set the mushrooms aside.

  • Step 3

    Preheat your oven to 200C. Roll out your puff pastry and lightly score a one inch border around the edges. Using a fork, prick the base of the puff pastry, but not the border. Layer over your caramelized onions followed by the mushrooms. Remove the leaves from your remaining sprigs of thyme and sprinkle over the tart. Sprinkle over parmesan cheese.

  • Step 4

    Egg wash the border of the pastry before placing it in the oven for 30 minutes or until the edges of the puff pastry and the mushrooms are golden brown. Remove from the oven and garnish with chopped parsley before slicing and serving.
