ingredients

  • 6 ounces cream cheese, softened
  • 1 egg, room temperature
  • 1/2 cup granulated sugar
  • 6 ounces chocolate chips
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup water
  • 1/3 cup vegetable or canola oil
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract

Method

  • Step 1

    Cream Cheese Filling Beat cream cheese, egg and sugar until smooth and creamy. Fold in chocolate chips. Set aside

  • Step 2

    Chocolate Cupcakes Preheat oven to 350°F. Line cupcake tin with paper liners. Spray with cooking spray. Set aside. In a large bowl, sift together flour, sugar, cocoa powder, baking soda and salt. In a medium bowl, whisk together water, oil, white vinegar, and vanilla. Pour wet ingredients into dry ingredients. Whisk together until just incorporated. Spoon chocolate batter into cupcake tin until ⅓ full. Top each with a large tablespoon of the cream cheese filling. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Continue with the rest of the batter and filling.
