Three-Bean Bacon Chili

"It gets cold in Hawaii. Seriously... It does. This is a recipe for one of those chilly 80 degree days we get. My rule of thumb is that no good chili should have less than two types of beans in it. Here, I'm taking it to another level-- three beans baby. And BACON. Beautiful."

ingredients

  • 1 pound Ground Beef
  • 1/2 cup cubed Bacon
  • 6 minced Garlic Cloves
  • 1/2 cup diced White Onion
  • 4 chopped Tomatoes
  • 1/4 cup diced Green Chili
  • 1/2 cup Black Beans
  • 1/2 cup Kidney Beans
  • 1/2 cup Cannellini Beans
  • 3 1/2 cups Beef Stock
  • 1/4 cup Dark Chili Powder
  • 1 tbsp Cumin
  • Salt & Pepper

Method

  • Step 1

    Start by heating up a thick bottomed pot and sauteing the bacon-- till it starts to brown. Add in the onion and green chilies and sweat for about three minutes.

  • Step 2

    Add the ground beef and spices. Saute for about six minutes to release the flavors of the spices. Add in the tomatoes, beans and stock. Mix well.

  • Step 3

    Cover the chili with a parchment lid to prevent a skin from forming on the top. Reduce on low for two hours or until nice and thick. Make sure to stir occasionally. Serve with biscuits and white cheddar.
