INGREDIENTS
16 oz cherry tomatoes, sliced in half
1/2 cup pitted olives
1/4 cup red onion, finely sliced
2 Tbsp parsley, chopped
4 Tbsp lemon juice
2 Tbsp extra virgin olive oil
Himalayan salt, to taste
Freshly ground black pepper, to taste
DIRECTIONS
Combine cherry tomatoes, olives, red onion, parsley, lemon juice and olive oil in a bowl. Add salt and pepper to taste.
