Kefir is a refreshing way to incorporate healthy bacteria into your beverages.
INGREDIENTS
Coconut water from 1 young coconut
2 Tbsp coconut water
Kefir, as a starter
Note: I like kefir Tonix brand. You only need to buy this once. Once you start making your own, you can use your own coconut water kefir as a starter for your next batch.
DIRECTIONS
Empty out the water of coconut into a mason jar. Heat coconut water to 92 degrees in dehydrator. Remove from dehydrator and add 2 Tbsp of coconut water kefir as a starter.
Make sure not to fill jar completely, leaving top 1/4 of jar empty. Close lid on mason jar tightly. Leave out at room temperature to ferment for 48 hours. After 48 hours, refrigerate and enjoy.
