1/2 cup lime juice
1/4 cup parsley, chopped
2 Tbsp olive oil
2 Tbsp water
1 Tbsp garlic, minced
1 1/2 tsp chili flakes
1 tsp cumin
1 1/2 tsp salt
1 Tbsp honey
4 salmon fillets (about 6 oz each)
3 bell peppers, chopped (1 red, 1 green, 1 yellow)
1 onion, chopped
Preheat oven broiler to high. Spray a baking tray with cooking oil spray; set aside.
Whisk together marinade ingredients until smooth. Arrange salmon fillets, peppers, and onion in a single layer on the baking tray. Pour half of the marinade over the salmon and peppers. Making everything is fully coated by the marinade.
Broil fish until the peppers begin to char and the salmon is cooked to your liking, about 10 minutes. Remove from the oven and serve immediately with the remaining marinade. Add a few lime wedges if desired.
