ingredients
- 2 eggs
- 4 tablespoons sugar
- 2 teaspoons vanilla extract
- 2 cups plain, low-fat yogurt
- 2 1/2 cups all-purpose flour
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups canola oil, for frying
- 1 cup powdered sugar, for dusting
- 1 cup smooth strawberry jelly
Method
Step 1
Combine the eggs, sugar, vanilla, yogurt, flour, baking powder and salt in a bowl and mix well. The batter should be thicker than pancake batter. Allow batter to rest about 10 minutes.
Step 2
Place oil in a 2-quart saucepan (you want about 2 inches of oil in the pan) and heat to 325F. With a soupspoon, drop small mounds of batter into the hot oil and cook 3 to 4 minutes. The doughnuts will turn on their own, but keep an eye on them to make sure they turn and cook on all sides until golden brown. Drain on a plate lined with paper towel.
Step 3
While still warm, fill the doughnuts with smooth strawberry jelly, either with a knife or a frosting syringe. Sprinkle the tops with lots of powder sugar. Enjoy!
