Black and White Russian
Serves 4
Adapted from Over Easy by @joythebaker

1/2 cup plus 3 tablespoons sugar
1/2 cup water
3 cups coffee, chilled
4 ounces Kahlua liqueur
2 ounces vodka
1/2 of a vanilla bean
1 1/2 cups heavy cream
Cocoa powder, for garnish

In a measuring cup, combine 1/2 cup sugar and the water. Stir until the sugar dissolves to make a simple syrup.

In a pitcher, combine the simple syrup, coffee, Kahlua, and vodka, and stir to combine. Keep refrigerated until ready to serve.

Slice the vanilla bean in half lengthwise, and use a small paring knife to scrape the seeds into a small bowl. Add the remaining 3 tablespoons of sugar, and use your fingers to break up any clumps and evenly mix the seeds into the sugar.

In a large mixing bowl, combine the vanilla sugar mixture and the heavy cream. Beat using the whisk attachment (or a hand mixer) until soft peaks form. — To serve, fill a glass with ice. Pour in the coffee mixture until the glass is about 2/3 full. Spoon some whipped cream on top to fill the glass, and top with a sprinkle of cocoa if desired. Cheers!
