Grilled Chipotle Lamb Chops

Feeds 3 (3x chops each). Prep time: 10 minutes. Cooking time: 10 minutes. 
 
Ingredients
9x lamb chops
Marinade: 
Olive oil
Chipotle salt
Freshly cracked black pepper
1 tsp liquid smoke 
1 tsp garlic powder
2 tsp onion powder
2 tsp smoked paprika
1 tsp hot paprika 
1 tsp cayenne pepper
1 tsp dried thyme 
1 tsp dried chilli flakes 
1 tbsp chipotle paste
1 tbsp honey 
4 tbsp Worcestershire sauce 
Fresh basil
 
Directions
Place all marinade ingredients in a bowl and mix till throughly combined. Score each chop a few times so the marinade can penetrate the meat. Once the lamb chops are covered in the marinade, place them in a bowl covered with cling film and leave outside the fridge for about an hour. This will help to bring the meat up to room temperate before kicking & helps to relax it. After an hour, begin to heat a large griddle pan or, light the BBQ. Cook on either side for 5 mins or until you have a nice char on either side. If there is excess marinade, re-baste the meat whilst it is cooking.
