- 4 large russet potatoes

- 2 tablespoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground black pepper

For the Passionfruit Aioli
- 1/2 cup mayonnaise
- 1 whole passionfruit
- 1 clove of minced garlic
- 1 teaspoon Dijon mustard
- 1 teaspoon freshly squeezed lemon juice
- to taste salt and ground black pepper
Method
Step 1
Soak the Potatoes: Wash and cut the potatoes into thick wedges. Soak the potato wedges in cold water with a generous amount of salt for at least 30 minutes. This helps remove excess starch and makes the fries crispier.
Step 2
Prepare the Passionfruit Aioli: To remove the passionfruit pulp, cut the passionfruit in half and scoop out the pulp and seeds with a spoon. Combine the mayonnaise, fresh passionfruit pulp, minced garlic, Dijon mustard, and lemon juice in a small bowl. Mix until smooth and well combined. Season with salt and ground black pepper to taste. Transfer the aioli to a serving bowl.
Step 3
Dry and Fry the Potatoes: Drain the soaked potatoes and pat them dry thoroughly with a clean towel. Heat vegetable oil in a large frying pan or deep fryer to 350°F (175°C). Fry the potato wedges in batches until they are golden brown and crispy, about 4-5 minutes per batch. Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.
Step 4
Season the Fries: While the fries are still hot, toss them in a large bowl with paprika, garlic powder, onion powder, and ground black pepper until evenly coated.

Serve: Serve the crispy paprika steak fries hot, alongside the passionfruit aioli for dipping.
