  • 1 large diced onion
  • 3 cloves of minced garlic
  • 1 large diced carrot
  • 1 large diced green bell pepper
  • 1 stalk of diced celery
  • 1 tablespoon freshly chopped thyme
  • 1 tablespoon freshly chopped oregano
  • 1 tablespoon cumin
  • 1 tablespoon coriander
  • 1 teaspoon red pepper flakes
  • 1 can (28 oz) San Marzano tomatoes
  • 1/2 cup tomato paste
  • 2 tablespoons red wine vinegar
  • 2 tablespoons red wine vinegar
  • 1/2 cup chopped Kalamata olives
  • 1/4 cup freshly chopped parsley
  • for serving crumbled goat cheese
  • for serving your favorite noodle or rice

Method

  • Step 1

    Brown the Lamb: Heat the extra virgin olive oil in a large saucepan over medium-high heat. Add the ground lamb to the hot oil. Break the meat into small pieces with a spoon. Cook until the lamb is thoroughly browned and no longer pink, about 6-7 minutes. Remove the lamb from the pan and set it aside, draining any excess fat if necessary.

  • Step 2

    Sauté the Vegetables: In the same pan used for the lamb, reduce the heat to medium. Add the chopped onion, garlic, carrot, green bell pepper, and celery. Sauté the mixture until the vegetables soften, about 5-7 minutes.
