Coconut Bars

Makes 4 bars

Ingredients:

70 gr shredded coconut
20 gr coconut oil
40 gr maple syrup,
50/60 gr dark chocolate
Blue spirulina and pink pitaya, for coloring coconut mixture

Method:

Blend everything together (except for the spirulina and pitaya powders) using a small food processor. Take out half of the mixture, and set aside. Add spirulina to the half that is in the food processor and blend. Then take out, set aside, and add the other half to the food processor and color with pink pitaya powder. Shape bounty bars with a layer of each color, and place them in the freezer.

Melt the chocolate in a double boiler or microwave, and when it’s cooled down a bit, coat each bar.
