ingredients
- 1/2 cup oats
- 1 cup plus 2 tablespoons unsweetened vanilla almond milk
- 1/2 teaspoon cinnamon
- 1 tablespoon flaxseed meal
- 8 strawberries, chopped into small pieces
- 2 teaspoon coconut oil
- 1 tablespoon hemp seeds
- 1 banana, sliced in half lengthwise
- 2 tablespoons creamy peanut butter
Method
Step 1
Combine oats and 1 cup almond milk in a medium pot. Bring to a boil. Then, mix in the cinnamon, ground flaxseed meal, and 2 tablespoons almond milk. Reduce to a simmer, and cook for 3-5 minutes or until thickened, stirring every 20 seconds.
Step 2
To make the jam, heat 1 teaspoon coconut oil in a pan over medium heat, Mix in the strawberries cook for 2 minutes. Once the strawberries have softened, mash them and mix in the hempseed meal. Continue to cook on low heat until thickened.
Step 3
In another pan, heat 1 teaspoon coconut oil over medium-low heat. Add the halved banana to the pan and cook for 2-3 minutes or until caramlized.
Step 4
Pour the oatmeal into a bowl and top it with jam, the caramelized banana and peanut butter.
