ingredients

  • 2 each chicken breast
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 2 each shallots
  • 1/4 cup vegetable oil
  • water
  • 2 tsp rice wine
  • 3 slice ginger
  • 1/4 cup soy sauce
  • 1/2 tsp sugar
  • 4 cup cooked rice

Method

  • Step 1

    Cook rice based on instruction.

  • Step 2

    Put chicken breast, salt, sliced ginger and water in a pot and bring to a boil. ( put enough water to cover the chicken)

  • Step 3

    Boil the chicken breast until totally cooked through. About 25 minutes.

  • Step 4

    Once the chicken is cooked, take it out and let it cool on a chopping board.

  • Step 5

    While the chicken is cooling down, make the fried shallots.

  • Step 6

    Slice shallots and bring the oil to simmer.

  • Step 7

    Add shallots and cook until golden brown on low medium heat. About 8-10 minutes.

  • Step 8

    Strain the shallots and oil.

  • Step 9

    Add sugar, soy sauce, rice wine and 1/2 cup of the chicken broth from cooking the chicken to the shallot oil pot.

  • Step 10

    Bring to boil, and add shallots oil and one third of fried shallots.

  • Step 11

    Shred chicken to pieces with hand.

  • Step 12

    To assemble, add rice to bowl, shredded chicken, fried shallots and drizzle with juice.

  • Step 13

    Serve warm and enjoy!
