  • 1/3 cup (70 grams) melted coconut oil
  • 2 tablespoons honey

  • 1/2 teaspoon vanilla extract
  • 1/4 cup (80 grams) maple syrup

  • 1 teaspoon coconut oil

Method

To make the shortbread base:

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

    In a medium-sized bowl, combine the almond flour, melted coconut oil, and honey. Mix until a dough forms.

  • Step 3

    Press the mixture evenly into the bottom of a lined baking tin. Bake for 10 minutes, or until the edges are golden brown. Remove from the oven and allow it to cool completely.

To make the caramel layer:

  • Step 1

    In a separate bowl, whisk together the peanut butter, coconut oil, vanilla extract, and maple syrup until smooth.

  • Step 2

    Pour the caramel mixture over the cooled shortbread base, spreading it evenly. Place the tin in the freezer for at least 2 hours, or until the caramel is fully set.

Add the chocolate topping:

  • Step 1

    Melt the dark chocolate with the coconut oil in the microwave or using a double boiler, stirring until smooth.

    Remove the caramel-topped shortbread from the freezer and cut it into bars.

    Dip each bar into the melted chocolate to coat. Place them on a parchment-lined tray and sprinkle with flaky sea salt.
