ingredients
For the milk chocolate ganache
- 3/4 cup milk chocolate chips
- 1/2 cup heavy cream
- 1 teaspoon honey
- 1 tablespoon unsalted butter

For the dough
- 9 tablespoons semi-salted butter, melted
- 1 egg
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 3/4 cups all purpose flour, sifted
- 2 tablespoons cornstarch, sifted
- 1 cup dark and milk chocolate chips
Method
Step 1
In a small saucepan bring the cream and honey to a boil and immediately remove from heat.
Step 2
Place the chocolate chips in a medium size bowl. Slowly pour the hot cream over the chocolate chips and mix with a spoon from the center out to obtain a smooth and shiny ganache.
Step 3
Stir in the butter and transfer the ganache into a small ice cube tray and freezer for at least several hours or overnight.
Step 4
In the bowl of a stand mixer fitted with the paddle attachment or using a hand mixer, cream together the melted butter and sugar until light and fluffy. Add the egg and continue beating until combined.
Step 5
Add the flour and cornstarch and mix until a homogeneous dough forms. Fold in the chocolate chips.
Step 6
Line a baking sheet with parchment paper. Divide dough into tablespoon sized balls and place a cube of the frozen ganache inside each cookie. Place the dough on the baking sheet and freeze for 25-30 minutes.
Step 7
Preheat oven to 375ºF. Bake chilled dough for 13 minutes until the edges are golden brown. Let cool before enjoying.
