Vegan Dark Chocolate Gingerbread Banana Bread

Ingredients:

130 gr vegan butter

70 gr dark chocolate

50 gr nougat chocolate (optional)

150 gr raw cane sugar

2 egg replacements (e.g. Flaxseed)

Some vanilla

300 gr spelt flour

4 very ripe bananas

1 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

2 teaspoons gingerbread spice

2 tablespoon chestnut purée (optional)

More chocolate to cover the cake

crumbled gingerbreads as decoration

Directions:

Roughly chop the chocolate and set aside. Mix all the other ingredients with a food processor- add the chocolate and just spoon it under - I marbles in some chestnut purée at the end, but tbh I didn't taste it, so that's optional. Preheat the oven to 180 degree celcius. Bake for 50-50 minutes (cover it with parchment paper after 30 minutes if it gets too dark). Let cool for 1 hour. Than melt some dark chocolate and mix with canola or coconut oil. Cover the cake and sprinkle with gingerbread crumbs. Enjoy!
