Vegetarian, Dinner
It's the first day of spring here in Australia!!! ... There are some beautiful fresh produce hitting the stores including spring vegetables; yum! ... I try to incorporate them anywhere I can such as this beautiful vegetable pilau.
Takes less than 30 mins to prepare and cook; a great way to get a heap of veggies on your plate!!

Ingredients:
2 cups of good quality basmati rice
4 cups of boiling water
1 vegetable stock cube (optional)
10 black pepper corns
3 cloves
1 black cardamom
Small cinnamon stick
3 tbsp olive oil
Diced vegetables include:
2 Carrots
Handful Green beans
2 Plum tomatoes
1 cup Garden peas
1/2 a red Capsicum
1/2 onion
1 tbsp fresh ground ginger
2 cloves garlic
Salt to taste

Heat up the oil and throw in the onion and let it soften and turn golden brown. Add the pepper corns, cloves, ginger, garlic and cinnamon and sauté for a few minutes. Throw in all the vegetables and sauté for a further 5 minutes until tender. Add the water and stock cube and salt and bring to the boil. Now add the rice and cook on a high heat to let the water evaporate. Turn off the heat once the water is absorbed and the rice is tender.

Serve it on its own with mint yogurt or as an accompaniment to any meal you choose.
