Apple & Fennel Salad

"Another day another salad adventure... Inspired by Middle eastern salads; today it's a simple one : Apple, fennel, dill. Dressed with lemon juice and lots of black pepper, it makes a great side dish or snack. Happy days"

The recipe is originally adapted from Sabrina Ghayour's Persia cookbook .

It's simply, as it states, made up of:

2 large red Apples - I used Braeburn apples
1 whole fennel bulb and dill (from the fennel stalk)
Seeds of 1/2 pomegranate

The dressing is made of the juice of a whole lemon and a generous amount of black pepper

This salad would happily feed up to 6 people as a side dish
