- 1 pound bacon
- 1 large onion, chopped
- 12 large eggs
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
- 1/2 teaspoon freshly ground black pepper
- 1 cup cottage cheese
- 1 (12 ounce) bag Cascadian Farm Organic Frozen Root Vegetable Hash Browns
- 1 cup shredded cheddar cheese
Method
Step 1
Cook the bacon: Chop the bacon and add it to a large skillet over medium heat. Cook, stirring frequently, until browned and crisp. Transfer to a plate lined with paper towels to drain.

Caramelize the onions: Pour off all but 2 tablespoons of the bacon grease from the pan. Add the chopped onions and cook over low heat until caramelized, about 15–20 minutes. Set aside.
