Tangzhong

ingredients

  • 20 grams bread flour
  • 100 millileters milk

Method

  • Step 1

    In a small saucepan, combine flour and milk and heat over medium heat whisking continually until dense. Transfer to a small container and cover with wrap. Let cool down completely before using.

  • 300 grams bread flour
  • 30 grams sugar
  • 5 grams salt
  • 5 grams instant yeast
  • 6 grams dry milk
  • 100 whole milk
  • 1 egg
  • Tangzhong
  • 25 grams butter, room temp
